Serving window frames, hatches and awning hardware
The serving window is the part of a food truck that gets used hardest and looked at closest. It is a large cut in a side wall, which removes structure from exactly the panel that flexes most, and the frame around that cut carries the hatch, the gas struts and often an awning. After a few seasons of road vibration the opening racks slightly out of square. The hatch touches at one corner first, the seal stops compressing along the bottom edge, and the truck starts taking water and dust through the gap while it sits at a lunch stop.
We treat that as a structural problem rather than a hardware problem, because tightening a latch on a distorted opening only moves the leak. The opening gets measured across both diagonals, the frame corners get straightened or rebuilt with new stock welded into the wall framing, and the perimeter gets resealed to the skin before the hatch is refitted. Only then does hardware alignment mean anything. Hinges are rebushed or replaced, strut mounting plates get reinforced where the fastener has pulled through thin sheet, and struts are fitted so the hatch holds position at the angle you actually serve from.
Awning hardware fails on its own schedule. Roll out awnings from Girard and similar suppliers load the body at a small number of brackets, and on a smooth sided unit those brackets are frequently anchored into skin and adhesive instead of into a framing member. One gust on an open lot takes the whole assembly out and tears a strip of skin with it. We rebuild the mounting into real wall structure, spread the load with backing plates behind the skin, seal every fastener that pierces the exterior, and refinish so the repair does not read as a patch.

Roof penetrations: exhaust hood flashing, vent curbs and air conditioner bases
A food truck roof carries more holes than almost any vehicle we see. The exhaust hood stack, a make up air vent, a roof air conditioner from Dometic or Coleman, Maxxair or Fan Tastic vent fans and sometimes a condenser all pass through a thin roof skin. Each one is a joint between materials that expand at different rates through a San Gabriel Valley summer, and each one is a leak waiting for its sealant to age out. Owners usually discover the problem in the first real rain of the season, long after the damage started.
Water rarely appears where it enters. It tracks along the underside of the roof sheet, follows a framing member downhill, and shows up as a stain on an interior wall panel several feet away or as a soft spot in the ceiling above a prep counter. By the time it is visible the roof framing in that bay has usually taken on moisture and lost strength. We open the area, replace the wet core and framing members, rebuild the roof sheet, and reset the penetration on new curb structure rather than laying fresh sealant over an old joint.
Exhaust hood flashing deserves the most attention of the group. It sits at high temperature, it is normally the largest single opening in the roof, and grease finds its way into every seam around it. We rebuild the curb tall enough that water cannot stand against the joint, fit new flashing, and finish it with a coating that tolerates heat and the cleaning chemicals used around a hood. The hood assembly itself, the fan, the ductwork and the fire suppression system belong to the supplier who installs and certifies them.

Generator bay structure, propane compartment integrity and exhaust pass throughs
Generator bays live in the worst environment on the truck. An Onan or Cummins unit vibrates continuously while the kitchen runs, the bay floor collects road water and spilled fluid, and the slide out tray or mount frame is usually welded into a body section that was never designed for a fatigue load. Cracks start at the mount weld toe and at the corner of the bay opening. Once the bay floor loses section, the whole assembly begins to move, which accelerates everything else. We rebuild the bay floor, the mount structure and the door frame with correctly sized material and proper gusseting.
The exhaust pass through is its own repair. It penetrates a body panel at high temperature with a component that moves relative to the body, so a rigid, sealed joint eventually cracks or burns through the surrounding material. We rebuild the pass through with a heat tolerant sleeve, restore the panel around it, add shielding where the routing runs close to combustible structure, and seal the joint so exhaust cannot enter the bay or the interior. What we do not do is open the generator: internals, fuel systems, control boards and load testing all stay with your generator service provider.
Propane compartments follow a different set of rules and we build them to respect that. The compartment has to stay isolated from the kitchen interior and vented low to the outside, so the repair centers on the shell, the floor vents, the door frame and the sealing at every wall the compartment shares with the occupied space. We replace corroded floor pans, clear and rebuild vent openings, straighten door frames so the door closes flush, and reseal the interior wall. Regulators, hoses, valves and cylinder certification stay with your propane supplier.
Equipment mounting into the floor framing, not into the plywood
The most common structural complaint we hear from West Covina food truck operators is that the equipment moves. A griddle creeps forward, a fryer rocks when the truck brakes, a refrigerator drifts sideways on the drive to a stop and the drain line pulls tight. In almost every case the cause is the same: the equipment was fastened into the plywood subfloor alone. Plywood holds a screw well the first month and poorly after a thousand heat cycles and a few hundred washdowns, and once the fastener wallows its hole the movement compounds.
The correct repair locates the actual floor framing, which on most kitchen bodies is a steel or aluminum crossmember grid under the subfloor. We add crossmembers where the equipment position does not line up with existing structure, install backing plates under the floor, and through bolt with load spread instead of relying on a fastener biting into wood. Every penetration that goes through the floor gets sealed from below so the mounting itself does not become the path for water and grease into the framing.
The same logic applies above the floor. Wall mounted shelving, hood support brackets, exhaust fan mounts and beverage equipment all want a framing member behind them, not a sheet of FRP panel. We open the wall where needed, add blocking or steel between the studs, close the wall with new panel and coving, and seal the joint. Plumbing connections, gas lines, appliance electrical hookups and the appliances themselves are handled by your equipment installer. We build and finish what they mount to.

Interior sanitation surfaces, washdown floors and tank mounting structure
Interior surfaces in a kitchen body have to survive daily washdown and read clean to an inspector, which means the repair standard is different from a normal interior job. FRP wall panels are set with continuous adhesive and the seams are covered with proper trim rather than caulked over, stainless is used where an inspector expects a wipeable surface next to a cook line, and inside corners are coved so there is no square joint holding residue. We rebuild damaged panel sections, replace trim, and finish corners the way the surface is going to be cleaned.
Floors take the worst of it. A kitchen floor covering has to run up the wall as a coved base, and the coved base has to be bonded to a sound substrate or it lifts and traps water behind it. When we open a soft floor we usually find the subfloor wet under the covering at the step well, along the wall behind the sink, and around any fastener that went through unsealed. Repair means replacing the subfloor section and framing, then reinstalling covering with sealed seams and a continuous coved base up the wall.
Fresh and waste tank mounting is a structural item hiding under a plumbing item. A full tank is a heavy, sloshing mass hanging on straps, and the straps load whatever they are bolted to. Where they are bolted into a floor sheet or a thin body member, the fastener eventually elongates its hole and the tank starts to swing. We rebuild the mounting into framing, replace straps and cradle structure, and add support so the load spreads. Tanks, pumps, water heaters and the plumbing between them stay with your plumbing supplier.
Body shell repair, wraps and getting a food truck to Yorba Linda from West Covina
Outside the kitchen, a food truck collects the same damage every working commercial vehicle does. Low clearance strikes at parking structures and drive throughs crush the front roof edge and the hood stack. Step van rockers pick up curb rash from years of parking tight to a sidewalk. Rear door frames and step wells distort from constant loading. On FRP bodies the classic failure is delamination, which reads as a soft bubble under the wrap where the skin has separated from the core, usually starting at a fastener or an old repair.
Graphics decide how the truck sells, so we plan the substrate for them. A riveted body will always show its rivet line through vinyl, and pretending otherwise produces a wrap that looks poor within a month. Where the customer wants a smooth read, that has to be built in with panel and filler work before paint and vinyl. On a smooth sided body the substrate needs to be flat, fully cured and clean, because vinyl over fresh finish that has not gassed out will lift at the edges. We coordinate with your wrap installer on timing so that does not happen.
Every job is performed in shop at Yorba Linda. We do not offer mobile service and we do not travel to a commissary or an event lot. My serving window only seals at one corner now. Is that the hatch or the truck?
It is almost always the opening. A large cut in a sidewall loses stiffness over time, and road vibration slowly racks the frame out of square. The hatch is still straight, so it lands on the high corner and leaves a gap along the opposite edge. We measure the opening diagonally, straighten or rebuild the frame into the wall structure, reseal the perimeter, then reset hinges, struts and the latch. Adjusting the latch alone on a distorted frame just moves the leak somewhere else.
There is a stain on my kitchen ceiling but I cannot find the leak. Where should I look?
Not where the stain is. Water enters at a roof penetration, runs along the underside of the roof sheet, and follows a framing member before it drops through the ceiling panel. The usual sources are the exhaust hood flashing, a vent fan flange or the air conditioner base gasket. We open the roof at the actual entry point, replace the wet core and framing, rebuild the curb, and then repair the interior panel. Sealing over the old joint from above buys a season at best.
Our griddle and fryer shift on every drive. How should they have been mounted?
Into the floor framing, with backing plates and through bolts, not into the subfloor plywood. Plywood holds a lag screw fine when it is new and poorly after repeated heat and washdown cycles, and once the hole wallows the movement gets worse fast. We locate the crossmember grid, fabricate additional crossmembers where your layout does not line up with existing structure, add backing plates underneath, through bolt, and seal each penetration from below so the mounting does not become a water path.
Do you work on the generator, the hood system or the propane equipment?
No. We build and repair what those systems mount to and pass through. That means generator bay floors, mount structure, bay doors, exhaust pass throughs, heat shielding, propane compartment shells, floor vents and the sealing that keeps a vented compartment isolated from the kitchen. Generator internals, fuel systems, hood fans, ductwork, fire suppression, regulators, hoses and valves all stay with the suppliers who install and certify them. We coordinate scheduling so both scopes happen in one downtime window.
Can you get our interior surfaces ready for a health inspection?
We can rebuild the surfaces to the standard those inspections look for: FRP wall panel replaced with proper trim rather than caulked seams, stainless where a wipeable surface belongs, coved inside corners with no square joint holding residue, and floor covering with a continuous coved base bonded to a sound subfloor. What we do not do is issue or arrange any health department certification. That is between you and your county inspector. We build the surfaces with that inspection in mind and let it stand on its own.
